All you need to do to change your character's appearance is to progress through the story until you reach the Hall of Gods. Once you're there, look for Aphrodite's chair. It is next to the points where you must interact to improve your character, so it is not lost. There you can change the basic appearance of your character.
How to equip skins to weapons and armor
As you complete missions, get collectibles, etc., you will get new weapons, armor, and skins for them. That is, you can equip the armor with the characteristics and abilities you want, but since you don't like the way it looks, you can make it look like another of the armors.
To do so, simply open the menu and hover over the part you want to modify. Depending on the platform you play on, press the button indicated on the right side of the screen. If you have skins available for that part, you can make it look whatever you want from your catalog.
